Ingredients
  1. 3 tablespoons fresh Key lime juice
  2. 2 teaspoons white wine vinegar
  3. 1/3 cup white wine
  4. 1/2 teaspoon minced garlic
  5. 2 tablespoons whipping cream
  6. 1 cup unsalted butter, chilled and cut into small pieces
  7. 1/2 teaspoon Key lime zest
  8. 3/4 teaspoon kosher salt
Instructions
  1. Combine first 4 ingredients in a small skillet; cook over medium heat until reduced.
  2. Stir in whipping cream, and cook until reduced.
  3. Reduce heat to medium-low; add butter, 1 tablespoon at a time, stirring until butter melts.
  4. Remove from heat; strain through a metal sieve.
  5. Stir in lime zest and salt. Keep warm.
Notes
  1. Serve warm.
